Sticky Pork Mince Stir Fry

This quick and tasty midweek recipe serves 4 and is ready in just 25 minutes – I think you’ll love it!

ingredients

500g pork mince

2 tbsp sesame oil (or vegetable oil)

3 garlic cloves, minced

1 thumb-sized piece fresh ginger, grated

1 red chilli, finely chopped (optional)

2 peppers (red/yellow), sliced

1 large carrot, cut into matchsticks

4 spring onions, sliced (keep some green tops for garnish)

3 tbsp soy sauce

2 tbsp oyster sauce (or hoisin for sweeter flavour)

1 tbsp honey (or brown sugar)

Juice of 1 lime

Cooked rice or noodles, to serve

Sesame seeds & fresh coriander, to garnish (optional)

Method

  1. Cook the pork: Heat a wok or large frying pan over medium-high heat. Add sesame oil, then the pork mince. Cook for 6–8 minutes until browned, breaking it up with a spoon.
  2. Add aromatics: Stir in garlic, ginger and chilli. Cook for 1–2 minutes until fragrant.
  3. Veggies in: Toss in peppers, carrot and most of the spring onions. Stir-fry for 3–4 minutes until just tender but still crisp.
  4. Make it sticky: In a small bowl, mix soy sauce, oyster sauce, honey and lime juice. Pour into the pan and stir well, letting it bubble for 2–3 minutes until the sauce coats the mince and veg.
  5. Serve: Spoon over rice or noodles, sprinkle with sesame seeds, coriander and the reserved spring onion tops.

Tip: Batch-cook the pork mince with sauce and freeze. Reheat and add fresh veg for a speedy dinner.
