Dr khans’ salad

A big, beautiful salad is the best way to celebrate delicious seasonal produce! I saw Dr Khan from ITV make this on his instagram and I had to make it but I have added some extras

Ingredients

1 Large red pepper

1 block of feta cheese

1 can of chickpeas

1 whole cucumber

1 large red onion

1 large white onion

12 cherry tomatoes

pomegranate seeds

1 Lime

Pack of couscous

Method

Finely chop the onions, tomatoes, cucumber and pepper. Cube the feta cheese and add to a large bowl.

Make up the couscous following the instructions and then mix into the bowl, for the added the bonus of protein stir in one can of chickpeas and stir.

Squeeze in the juice of one large lime and stir.

Serve on a warm flat bread or just as it comes and garnish with some pomegranate seeds for extra colour and flavour.

Slow Cooker Gammon

Steps 

1. There is no prep required for this simple Sunday dish and whilst it’s cooking you can get on with your Sunday cleaning session. 
2. Place a gammon joint into the slow cooker. 
3. Pour in 75g of brown sugar ad rub over the gammon a further 75g. 
4. Pour in 500ml of cider. 
5. Add in 2 bay leaves and 10 peppercorns and leave to cook on high for 4 hours. 
6. Serve with mini roast potatoes and vegetables. or for a warmer day with new potatoes and salad.

Watermelon Salad with Feta Cheese

This is such a tasty refreshing salad, perfect for summertime. 

Ingredients 

• Medium-sized watermelon 
• Half a cucumber 
• One block of feta cubed 
• Chopped mint leaves 
• One lime 
• Olive oil

Steps

1. Add the chopped-up watermelon to a serving bowl
2. Add in the chopped cucumber, cubed feta, and chopped mint leaves
3. Mix together
4. Add the juice of the squeezed lime
5. Drizzle with olive oil

This will make a refreshing lunch or a great BBQ side.
