Meal Planning Week 2

Great to see so many of you so enthusiastic about my week 1 meal plan.  Cooking isn’t really my thing but I am great at picking meals and having in all the ingredients I need for the week. I like to keep my meals simple but 6 days a week I make sure me and children have a health home cooked meal together. If my husband is home its an added bonus.

Monday – Toad in the Hole

Make up a batter using 140 grams of plain flour, pinch of sale, 2 eggs and 175ml of milk,Mix together into a large mixing bowl and then leave in the fridge for one hour.
Cook the sausages in a baking dish with a little oil for 10 minutes until brown.
Take out the oven and pour over the batter mix.
Cook for a further 20 minutes.
Serve with fresh green vegetables and gravy

Tuesday – Avocado and bacon macaroni cheese   (I discovered this about a year ago and its delicious and the kids will love it)

Boil 450g of Macaroni pasta
Mix 2 prepared avocados, 120g of grated cheese and black pepper into a bowl until its smooth
Cook 100 grams of bacon. Then cut into small pieces.
Drain the pasta and add to a dish.
Pour over the avocado mix along with the bacon and add some bread crumbs
Bake for 20-25 minutes until bubbling

Wednesday – Homemade Pizza (This will make 2 large pizza’s)

Pour 200g of  strong white flour along with 7g of yeast and a pinch of salt into a large bowl
Make a well in the centre and add 140ml of warm water and a table spoon of olive oil
Mix together until its wet and stodgy
Cover with clingfilm and leave for approx 30 mins in a warm area
Once rested break in half and roll out two pizza bases.
Add them onto a well oiled base and add the toppings of your choose starting with a passatte.
Cook at 200 degrees for 18 minutes and serve with salad.

Thursday – Simple Chicken stew (I do this one in the slow cooker )

Add into your slow cooker 2 large chicken breasts cut into chunks, 2 carrots, 1 large potatoe, 25g of sweetcorn, 2 garlic cloves, 1 bayleaf, 400ml of chicken broth and 1 tbsp of paprika.
Pop the lid on and cover for 4 hours.
After 4 hours add 2 tbsp of cornflour and 25 ml of water stir into the stew and cook for a further 30 minutes
Enjoy with rice or fresh bread.

Friday – Quesadillas

Fry chicken cubes with pancetta in a pan with 4 spring onions, 1 red petter and a handful of sweetcorn. Once cooked add into a bowl.
Add one tortilla to the pan and then top with the meat filling and some grated cheese.
Add the other tortilla to the top and press down and cook for 3 minutes
Repeat for the other one and serve with salad and wedges.

Saturday – Spaghetti with meat balls (with sausages)

Skin 400g the sausages and put the meat in a bowl
Add the zest of a lemon , some chilli flakes and some bread crumbs
Add in 20g of parmesan and mix all the ingredients together.
Shape into 20 balls. Add these to a fry pan and cook until golden
Add in a tin of tomatoes anda splash of red wine vinegar
Cook the pasta
Add the pasta to a bowl and top with the meat balls and the tomato sauce. Add a little extra cheese for the topping

Sunday – Beef Chilli

Heat up a pan and add in 1 large chopped onion, 1 large red pepper, 3 chopped mushrooms and stir for a few minutes
Add in 500g of mince beef and cook for 5 minutes
Pour over a tin of chopped tomatoes and squeeze in some tomato puree
Add in a tin of black beans, 1 table-spoon of chilli powder and a cup of water
Cook for 15 minute
Serve with rice or tortilla.
